Smart Fish Cakes

We all know that we should eat more fish because it is so good for our hearts and brains but it can be a bit pricey.  Canned Salmon is a great {cheap} way to get the nutritional benefits of fish and one of my favorite ways to prepare it is by making salmon cakes.

You will need:

12 oz. canned salmon

1/2 cup italian-flavored breadcrumbs (or you can make your own by toasting bread and giving it a whiz in the food processor)

1/2 tsp. lemon pepper

1/4 tsp. salt

2 eggs

1/3 cup finely diced onion

1 tsp. olive oil

Coat a small pan with olive oil and saute the onions until tender.

Put the salmon in a bowl and break it up with a fork.  Next add the onions and the rest of the ingredients (except the eggs) and mix, then add the eggs and mix everything together (you may need to use your hands for this).

Form golf-ball sized balls and pat down into patties, about 1/2″ thick.

Coat a griddle or pan with non-stick cooking spray, let it heat to medium, then put on the salmon cakes.  When the bottom starts to look toasty (after around 4 minutes) flip them over and cook until that side starts to look toasty too.  Serve with fresh lemon.

These make a great finger food for kids too.  You could even make smaller cakes for them to eat like nuggets.
