When I think of cheap, healthy dinner I think of beans and rice. This is a little bit more exciting than plain ole beans and rice. It’s easy to make, tasty, and makes great leftovers too.
I make variations of this meal, depending on what I happen to have on hand so feel free to make substitutions or omissions.
You will need:
1-1/2 cups brown rice (or whatever kind of rice you happen to have)
3 cups water
1-1/2 cups black beans (to save $ I buy dry beans and make up huge batches and freeze them in individual serving size bags)
2 grilled chicken breasts, diced (I grill up several breasts to use for several meals in the week; you could also use rotisserie chicken)
1 medium onion
1 green bell pepper
1 red bell pepper
2 ears of corn (or about a cup and a half of frozen corn)
3 garlic cloves
2 tsp. cumin
1 tsp. chili powder
1 tsp. paprika
2 tsp. salt
1 cup chopped cilantro
First cook the rice, following the directions for your specific kind of rice.
Dice the onion and sautee in a little olive oil. While that is cooking dice the bell peppers and then add them to the pan. Once they all start to get tender, add the corn and garlic and saute for a few minutes.
Then add the chile powder, paprika, cumin and salt and mix it all together.
Next add the black beans, chicken, rice, and 1/2 cup cilantro. Spritz on the juice frome the lime and mix it all together well.
You can use avocado and the remaining cilantro to garnish it.
