Home date night pizza- procuitto, goat cheese, and roasted red peppers

Ooh la la– this super delish pizza turns any old night into a special night for you and that special someone.  Put the kids to bed, open a bottle of wine, and it’s time for Mommy and Daddy to have some fun in the kitchen!

You will need:

1 batch of pizza dough (I used all white flour and the larger portion of dough for the regular crust)

1/2 cup Pizza sauce (your favorite canned Italian flavored tomato sauce… or home-made from fresh tomatoes if you want it to be extra special… we just happened to have the perfect pizza-sized portion in our freezer leftover from some summer tomatoes, yum!)

1 cup shredded mozzarella (to save $ I like to buy it in bulk and keep some in the freezer for whenever the pizza mood strikes… which is pretty often)

1/3 cup goat cheese

1/2 cup prosciutto cut into strips (to save $ I buy just a few slices at the deli counter– 4 to 5 slices will be plenty, depending on how wide the slices are)

1/3 cup chopped roasted red peppers (jarred is fine— I get these at the Dollar store… who knew?)

1/3 cup sliced kalamata olives

After baking the dough for the first time, add your tomato sauce, then half of the mozzarella, then the next 4 ingredients, and top it off with the remaining mozzarella.  Oh, and my husband would not want me to forget to mention that the prosciutto should be “wadded” (this way it gets a little crispy),  NOT folded and certainly not flat.

Bake it about 10 more minutes, until toasted to perfection!

We served ours with a side salad with a simple homemade vinaigrette.

Ahhh…love!!!
