“Tequila-Lime Marinated Shrimp Pizza With Cilantro Pesto, Chorizo, and Goat Cheese.” That’s really what this pizza should be called but I thought it was a little long.
This is not one of my quick weeknight meals, it always feels like a special occasion when we make this pizza because it is unbelievably delicious! All the flavors go together so perfectly, it is like an explosion of yummy flavors in your mouth with each bite. It has a lot of ingredients that require preparation but my husband and I enjoy making it together and it is definitely worth the work! Usually when we make it for other people they tell us we should open a pizza restaurant.
This recipe is inspired by one by Emeril we tried several years ago.
Easiest Pizza Dough– I made the larger quantity for slightly thicker crust
1/2 lb. fresh shrimp
3-4 Tbs. fresh lime juice
1 tsp. grated lime zest
1 tsp. crushed red pepper
1/4 tsp. cumin
3 Tbs. tequila
2 tsp. salt
2 cups + 1 Tbs. chopped fresh cilantro
6 crushed garlic cloves
6 Tbs. olive oil
1/2 tube of Mexican chorizo
1/3 cup thinly sliced onion
1/3 cup thinly sliced red bell pepper
1 cup grated Colby-jack or Monterrery Jack cheese
4 oz. crumbled goat cheese
The first thing to do is to marinate the shrimp. Combine the first 6 ingredients in a plastic bag, along with 1 tsp. salt, 1 Tbs. chopped cilantro, and 3 crushed garlic cloves. Let it marinate for about half an hour.
While the shrimp marinate, I like to go ahead and stretch out the pizza dough and let the oven start to heat to 475 degrees. While it’s heating, I work on getting the other ingredients ready.
To make the pesto, combine 2 cups cilantro, 3 garlic cloves, 1 tsp. salt, and olive oil in a food processor.
Cook the chorizo in a skillet until it starts to get crumbly. I definitely recommend draining it on a paper towel to remove all the fat (I wish). I don’t recommend looking at the nutritional information on the Chorizo package, just know that a little adds a lot of flavor! I cook up the whole tube and freeze about half of it. It’s great to add to scrambled eggs… toss it in a tortilla and you’ve got a yummy burrito!
Next, saute the onions and peppers in a little olive oil, just until they start to become tender.
Then discard the marinade and toss the shrimp in the pan with a little olive oil. Cook until they just turn pink. These shrimp are so yummy, you will want to make them again as a main course (but don’t forget to save them for the pizza)!
Once the oven is heated to 475, put the crust in for about 4 minutes. Then take it out to add all the yummy toppings!
Spread the cilantro pesto evenly over the crust, sprinkle on some of the shredded cheese and then the add shrimp.
Next, add the chorizo, peppers, and onions.
Top it off with another layer of shredded cheese and crumbled goat cheese, then pop it back in the oven.
Let it bake for around 10 minutes. This will vary based on your oven but you can tell when it’s done because starts to look nice and toasty.
Slice it up and enjoy!!!
