Creamy Italian Chicken {easy slow-cooker dinner}

This is one of those recipes that makes me feel like I cheated because it is way too easy to turn out so delicious!

I’m always a little skeptical of crock pot recipes because they have a tendency to turn out bland and mushy but this sauce is very flavorful and yummy!

Ingredients:

2-4 boneless skinless chicken breasts (I used 2 large ones)- fresh or frozen is fine

1 8 oz. block of cream cheese (I used less-fat neufchatel)

1 can cream of chicken soup

1 pkg. Italian dressing mix

pasta (I used egg noodles)

Put the chicken in the crock pot.

Mix the cream cheese, cream of chicken soup, and dressing mix together and spread it on top of the chicken.

Cook on high 4-6 hours or on low around 8 hours.

This is what it looked like when it was done cooking (not real appetizing, I know).  I removed the chicken and used my immersion blender to mix the sauce.  Then I put the chicken on a bed of freshly-cooked pasta and served it with the sauce on top.  It would also be great if you just chopped up the chicken and mixed it in with the sauce, then put that on-top of pasta (or even mixed the pasta in with it).

Any way you serve it, it is very yummy!

  1. We had this tonight and it was very tasty! The chicken was so tender that I shredded it and mixed it with the sauce…served over egg noodles. Delicious and so easy!! Can’t wait to hear about Belize!
