I love making quiche because it is quick, easy, cheap, and tasty and I can usually whip one up with whatever ingredients we have on hand. One particular man in my family likes to eat quiche, as long as it is not called “quiche” (that sounds too girly), so at our house we sometimes call it “man pie” (you can’t say that sounds girly).
This is also a great way to get little ones to eat veggies. You can vary the recipe depending on what you have- broccoli or asparagus (or really any veggie) could be substituted for the spinach, you could add bacon or make it meatless, and you can use any kind of cheese. It’s even good if you make it without the pie crust (just spray the pie pan with cooking spray).
Another great thing about this recipe is that it works well for breakfast, lunch, or dinner!
1 pie crust (I usually have some in my freezer)
1 pkg. frozen chopped spinach (thawed and drained)
1 cup milk
4-5 eggs, depending on size
1 cup cheese (whatever you have on hand is fine, I used 2/3 cup cheddar and 1/3 cup parmesean)
1 cup diced ham
salt and pepper to taste (I used 1/2 tsp. salt and 1/4 tsp. pepper)
Preheat the oven to 375.
Prepare crust in pie pan (or you can use the premade frozen crust, or even no crust if you want to be more healthy).
Whisk the eggs and milk together.
Mix the rest of the ingredients in.
Dump it into the pie crust.
Bake for around 45 minutes. When it is done the center will be set and the top will look nice and toasty.
