This is something I created several years ago when I was just trying to come up with something to make for dinner using ingredients we already had. We liked it so much that I still make it!
This is a really yummy appetizer I made for New Years but it would also be great for the Super Bowl! It sounds complicated but it’s pretty easy to make since you can use rotisserie chicken. Anything with bacon and puff pastry sounds pretty great to me!
I’m calling this Mama’s lasagna even though it’s not really my Mama’s lasagna. It’s not even my Italian grandmother’s lasagna (and I don’t have an Italian grandmother). Nope, the Mama who loves to make this lasagna is my son’s Mama, me!
I like my lasagna tomato-ey, meaty, and delicious! I’m actually pretty crazy about this lasagna and it’s pretty easy to make. Luckily my son seems to be crazy about it too so I have a good excuse to make it often!
This meal is wonderful for any night of the week. When I made it for my husband recently he was raving about how good it is and said he wants me to make it for dinner every night! I don’t think I’ll be doing that but it is easy enough to make quite often.
“Tequila-Lime Marinated Shrimp Pizza With Cilantro Pesto, Chorizo, and Goat Cheese.” That’s really what this pizza should be called but I thought it was a little long.
This is not one of my quick weeknight meals, it always feels like a special occasion when we make this pizza because it is unbelievably delicious! All the flavors go together so perfectly, it is like an explosion of yummy flavors in your mouth with each bite. It has a lot of ingredients that require preparation but my husband and I enjoy making it together and it is definitely worth the work! Usually when we make it for other people they tell us we should open a pizza restaurant.

I love to cook food from scratch, it is something I enjoy doing with my leisure time. But let’s face it, I don’t have all that much leisure time and sometimes I need meals that I can throw together during nap-time and then stick in the oven before dinnertime that will make the house smell great when the hubby gets home and make a delicious dinner for us that tastes a lot fancier than it really is. This is one of those meals.
